Cherry Chocolate/White Chocolate Chip Cookies



I think the name of these cookies are quite enough information to know that they are a must-make...at least they are for me! Some of my very favorite flavors are all together in one bite and it just doesn't get much better or easier than that!



Ingredients:

1 Cup granulated sugar

3 Sticks (1 1/2 Cups) butter, softened to room temperature

1 egg

1 Teaspoon vanilla

3 Cups all purpose flour

1 Teaspoon baking soda

8 oz semi-sweet mini chocolate chips (you can use regular sized chips if you like!)

4 oz white chocolate chips

1 (10 oz) jar of maraschino cherries (drained and chopped into pieces - as large or as small of chunks as you prefer)

4 - 6 oz of white chocolate chips to melt and drizzle over the cookies (this adds to the yumminess and makes them look super pretty and just a little fancier! ; )


Preheat the oven to 350.


Cream the butter and sugar together and add the egg and vanilla and incorporate well. Add the flour and mix until just combined, as to not over work the dough. Add in the chips and gently stir in the cherries so that they don't get too beat up in the process and make your dough completely pink (but, that isn't necessarily a bad thing...).


Drop onto cookie sheet (I like to line mine with parchment so that they don't stick) and bake for approx. 8 minutes and check them. They should be a golden color. I personally try not to let them get too dark. I like a softer cookie that has a little chew to it. If you like crispier cookies with a bit of crunch, let them bake a bit longer.


Melt the extra white chocolate chips in a bowl and simply use a spoon or fork to randomly drizzle the cookies with all that yummy goodness! After a few minutes the chocolate will be all set and firmed up and ready to devour!
