Strawberry Pops




Pure fruit Popsicles are one of the healthiest, most fun ways to add fruit to you and your kids' diet! They are quick and easy to make - the hardest part is waiting for them to freeze so you can gobble them all up!


In a saucepan, add 3 quarts of fresh, clean strawberries, quartered

Approximately 2-3 Tbsp water

I add the zest of one lemon and then juice that lemon into the pan as well

2 Tbsp sugar or honey to cut any tartness of the berries


As that mixture begins to cook down, mash with a potato masher or fork to break down the berries. Continue to cook and allow them to bubble up and cook for about 3-5 minutes.


Next, you can either blend the mixture with an immersion blender (after it's cooled for about 10 minutes) or leave it more chunky. I have made them both ways and they are equally delicious!


Allow the mixture to cool by pouring it into an large measuring cup or another bowl. After it's mostly cooled, carefully pour into the popsicle molds and add the sticks. Getting those sticks centered and straight can be a challenge, but as long as they're in there close, it'll be fine - the molds I use have a top that goes on with guide holes for the sticks, so it makes it much easier!


Pop them in the freezer on as level a surface you can and let them freeze several hours. Overnight is a good time frame - that way you or your kiddos won't be peeking to see if they're done!
