White Chicken Chili

Fall is in the air - for some of the country! -- and some are definitely NOT! - But likely will be soon...

In my neck of the woods, we are most certainly entering the season of Comfort Food! 

I am wanting to hear all of your go-to, 'hunker down on a chilly evening' recipes!  Please share your favorites and we will all have some new good food to try out this fall and winter! 

I will start us off!  - One of my family's favorites (and it's SUPER easy) is White Chicken Chili - it is not tomato based and it is much more brothy than traditional chili.  It is also happens to be quite healthful and light (BONUS!) - and warm you to your bones!  There's hardly any dishes to clean up and you hopefully will have leftovers for the next day! 




Ingredients

  • 1 Package of the rotisserie chicken from Costco, or several cooked and shredded chicken breasts

  • 1 Cup Chopped Onions 

  • 1 Finely chopped garlic clove (or garlic powder if you don't have any fresh garlic)

  • 2 Teaspoons Olive Oil

  • 2-3 15oz. Cans Great Northern Beans

  • 2 cartons of chicken stock (I sometimes use more if I want more broth)

  • 2 4 oz. Cans Chopped Green Chilies

  • 1/2 Teaspoons Pepper

  • 1 Teaspoon Oregano

  • 1 Teaspoon Cumin

  • 1/4 Teaspoon Cayenne Pepper (add more or less to your liking)

Instructions

  • In a large stock pot, saute the onion and garlic in the olive oil until translucent.  

  • Add the chilis and allow to sweat down with the onions and garlic for a minute or two.

  • Add the spices, then add the chicken and stock.  

  • Add in the beans and allow soup to simmer for about 30 minutes.

  • Enjoy!

  • Plain Greek yogurt or sour cream

  • Sliced avocado

  • Cheese

  • Tortilla chips

  • Cilantro leaves
